			<content:encoded><![CDATA[<p></p><p><img class="alignleft size-full wp-image-1397" style="margin: 10px;" title="pumpkin" src="http://www.melaniward.com/wp-content/uploads/2009/11/pumpkin.jpg" alt="pumpkin" width="110" height="73" />Okay so I am not usually one to post recipes, especially ones that are so bad for you that you should NEVER, under any circumstances, eat it unless you plan on spending the entire next day running, and even then it&#8217;s questionable, but this is so unbelievably good that I couldn&#8217;t help myself.</p>
<p>(Besides what category do I put this under? Maybe I should make one called &#8220;cake&#8221;. (Hint: If you ever want to get on my good side and you want to know what to send me it&#8217;s easy: white birthday cake with white cream cheese frosting. I might even carry a child for you&#8230;well if I could&#8230;for good cake.) I think I&#8217;m going to put this in the category of &#8220;Health&#8221; just to be ridiculous.</p>
<p>So, if you are heading out for the holidays and you need a last minute dessert to share, look no further this is it. Or, if you&#8217;re like me and you don&#8217;t need a special occasion to eat any kind of cake (except chocolate) that comes with luscious cream cheese frosting, make it right now before your kids and husband get home.</p>
<p><strong>Ingredients:</strong></p>
<p>4 eggs (I told you it was bad)</p>
<p>1 Cup vegetable oil (and getting worse)</p>
<p>1 and 2/3 C white sugar</p>
<p>1 (15oz can) pumpkin puree</p>
<p>2 cups all purpose flour (add 2 heaping tablespoons if you are at elevation)</p>
<p>2tsp baking powder</p>
<p>1tsp baking soda</p>
<p>2 tsp ground cinnamon</p>
<p>1 tsp salt</p>
<p><strong>Directions</strong></p>
<p>1. Pre-heat oven to 350 degrees</p>
<p>2. Mix eggs, oil, sugar, and puree with electric mixer until fluffy</p>
<p>3. Sift flour, salt, baking soda, baking powder and cinnamon together and stir into pumpkin mix until combined.</p>
<p>4. Spread into ungreased 10-x15 pan (or a 9 inch cheesecake pan)</p>
<p><strong><span style="color: #ff6600;">5. Don&#8217;t forget to put a little bit of batter into one of those mini cake tins so that you can have a piece of cake before anyone comes over and they&#8217;ll never even know it:)</span></strong></p>
<p>6. Bake 25-30 minutes.</p>
<p>7. Let cool and then smother with yummy cream cheese frosting that I get at the store cause I&#8217;m lazy.</p>
<p>8. Eat</p>
<p>9. Feel really gross.</p>
<p>10. Run at least 10 miles to make up for it. Run more if you need another piece. That&#8217;s why we run after all, right?</p>
